Spicy Cucumber Sauce

(A Jaad)

Crunchy, pleasantly cool, sweet and spicy - the perfect condiment or topping.


1 cup sugar

3/4 cup rice vinegar

2 tbsps water

2 tsps salt

3 cups cucumbers

1/2 cup thinly sliced shallots

1/4 cup sliced red chiles


BRING sugar, vinegar, water and salt to simmer in medium saucepan on medium heat, stirring until sugar is dissolved.  Set aside to cool.

ADD cucumbers, shallots and chiles. Let stand 20 minutes to marinate. Or, cover and refrigerate overnight.
