Pineapple
The tropical taste of pineapple made more exotic!
1 pineapple, peeled, cored and cut into slices
1⁄4 cup palm sugar or brown sugar
1 cup dark rum
Coconut Ginger Ice Cream
Optional garnish: candied ginger
Place pineapple slices in an oven-proof dish. Combine sugar and rum and
pour over pineapple slices. Bake in a preheated 300°F oven, uncovered,
for 1 hour or until liquid has completely evaporated and pineapple is
soft. Place pineapple sections on plate. Declious alone or topped with
coconut ginger ice cream. Garnish with chopped pieces of candied ginger.
Makes 4 to 6 servings.
